4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization-Temperature, pH, Concentration and Hardness - P - The quat sanitizer in the 3-comp sink tested below 150 ppm while actively sanitizing dishes. The wall mounted dispenser was not operating properly. Quat sanitizer shall be made to a concentration of 150-400 ppm. (CDI - Automatic dispenser is not operating properly. Hand mix sanitizer until wall unit is repared.)
4-602.12 (B) Cooking and Baking Equipment - C - Microwave was found with food residues and debris on the inner portions and door. The cavities and door seals of microwave ovens shall be cleaned at least every 24 hours by using the manufacturer's recommended cleaning procedure. |
