4-501.11 Good Repair and Proper Adjustment-Equipment - C - Observed rust on shelving in the walk in cooler. Observed that the cabinets & drawers in the cake decoration area have chipped finish & missing trim (both upper & lower units). They are also constructed of particle board & have evidence of moisture absorption (see also 4-101.19 - equipment exposed to splash, spill, or food soiling shall be non-absorbent). Replace units with approved materials that are in good repair & are non-absorbent.
EQUIPMENT shall be maintained in good repair. REPEAT.
4-202.16 Nonfood-Contact Surfaces - C - Observed food stacked on milk crates in the walk in cooler. Replace with approved shelving that is easily cleanable.
Non-food contact surfaces shall be free of unnecessary ledges, projections, & crevices & designed & constructed to allow easy cleaning & to facilitate maintenance. |

5-203.14 - Backflow Prevention Device, When Required – P – Observed a Y-valve on the faucet in the mop sink. A Y-valve creates a continuous pressure situation & requires a backflow prevention device that is rated for continuous pressure. Current device is not rated for continuous pressure. An ASSE 1024 dual check backflow preventer would be an appropriate backflow device.
Corrected during inspection (CDI) - Y-valve removed. If the valve is used in the future, a dual check backflow must be installed.
A PLUMBING SYSTEM shall be installed to preclude backflow of a solid, liquid, or gas contaminant into the water supply system at each point of use at the FOOD ESTABLISHMENT by: installing an APPROVED backflow prevention device as specified
5-202.13 Backflow Prevention, Air Gap - P - Observed the drain line to the drink machine ice chest sitting below the flood rim of the floor drain. CDI - line set on top of the other line to create a proper air gap. Recommend fixed pipe that is attached to the bottom of chest to keep it in place.
An air gap between the water supply inlet & the flood level rim of the plumbing fixture, equipment, or nonfood equipment shall be at least twice the diameter of the water supply inlet and may not be less than 1 inch. |

6-501.16 Drying Mops - C - Observed hanging over the floor. Due to height of can wash ceiling, mop cannot be hung inside this area. Recommend alternative arrangement that will keep mop elevated & drying over the drain. Try a hook inside the mop area to hang the head.
Mops shall be stored so they air-dry without soiling walls, equipment or supplies.
6-501.11 Repairing-Premises, Structures, Attachments, and Fixtures-Methods - C - Observed low grout under the ice cream topping cooler. Replace grout. Back door is warped & does not close tightly on its own - must be pulled closed. Repair.
Facilities shall be maintained in good repair. |
