General CommentsEHS observed facilities employee health policy missing information on when employees can return to work. PIC stated that the general policy is to obtain a doctors note. This is a correct determination and PIC was knowledgeable of procedure and able to provide the information during inspection. EHS stated policy should include this information to ensure employees know that is the expectation. Commercial pesto in facility states on packaging item shall be only held for ten days. EHS was unable to verify when the pesto in WIC was opened; PIC voluntarily discarded. EHS discussed issue with PIC and stated since pesto is commercial, the use by date or container should state shelf life for food or if food shall be refrigerated after opening. Moving forward facility shall make pesto when opened and only hold for ten days max. Chicken wings state par-cooked on date mark, however, EHS verified chicken wings are fully cooked upon delivery.

Sauce bottles are stored in top of make unit, which cannot provide adequate airflow to keep bottles cold through service. CDI - PIC voluntarily discarded items.
