3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed cut tomatoes, roasted brussel sprouts, pork belly, and pasta prepped the day prior without date labels. Ensure to label all TCS food items held for longer than 24 hrs. CDI PIC added proper date labels to food items during the inspection.
3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed gouda cheese held passed allowed time/temperature window, gouda was dated for 10-25-18. CDI PIC voluntarily discarded container of gouda cheese. |
