3-501.15 Cooling Methods (Pf). Observed recently prepped salad containing cut lettuce and shredded cheese cooling in walk in cooler with tightly fitted lids. Quickly cool foods. Use open/vented shallow pans, large ice baths, and active stirring methods. Cold air must flow around the product to remove the heat. Corrected- Pans were relocated to the walk in freezer and when rechecked were within proper cooling parameters. |
