3-501.15 Cooling Methods (Pf) Observed mac and cheese and beef dinner kits cooling in grab & go case with tight fitting lids. Observed tomato sauce cooling in pizza flip top cooler. Rotisserie chicken prepared yesterday in grab & go cases above 41F. Heavy condensation buildup on lids indicating lids were placed on while items were still warm. Quickly cool foods. Use open/vented shallow pans, large ice baths, and active stirring methods. Cold air must flow around the product to remove the heat. Use proper cooling equipment such as walk-in cooler/freezer to cool foods. Grab & go cases not designed for rapid cooling. Corrected, per PIC all items prepared or opened ~30 mins prior to observing violation, items placed in walk-in cooler with lids vented to cool rapidly. REPEAT. |
