3-501.19 Provide and follow written procedures for foods held using Time as a Public Health Control (TPHC). Clearly mark foods with begin and end times. (Pf) Observed Time as a Public Health Control Log used for some TCS foods at the neighborhood kitchens not filled out, also observed milk improperly stored above 41F degrees that should be held on Time as a Public Health Control. EHS and PIC discussed the time procedure for the milk. Since all items severed at breakfast, lunch, and Dinner are prepared and discarded after service a smaller portion of milk should be provided so that the whole gallon is not discarded after each service. Corrected milks were voluntarily discarded and time stamps were added to product for the lunch service. Verification required EHS will return in 10 days to verify that the time procedure is being followed and that items are being marked with a start time and discard time. |
