General CommentsOverall inspection was improvement. PIC, as per last inspection, was helpful, insightful, knowledgeable, and found answers when it was in regards to processes and procedures from the commissary. PIC and staff implemented corrective procedures from last inspection. Cold holding repeat priority item is due to poorly functioning cooling equipment. Due to PIC’s daily practices of logging and taking temperatures, TCS food out of temp was able to be salvaged because it was quickly addressed and because of the temperature logs. Cooked bones, PIC stated they are picked up by commissary. Any item that uses cooked bones has to use the preparation/date mark of when those bones were cooked. Unless cooked bones are give date mark of when item was cooked, then immediately placed in freezer which stops time. Then what ever product is made from those now frozen bones, have to account for the one day of when the bones were first cooked and meat stripped off.

Vat it was coming from had date mark of 1/27. PIC stated this is was SOP, date TCS item was parceled out into smaller pans was date mark placed on items. Observed date mark of 1/31 on mac and cheese smaller pans in WIC. PIC stated they came from another batch, but was unsure what date that vat was. CDI PIC facilitated correcting date on the smaller pans from the vat marked 1/27 with expiration of today, 2/2. Mac and cheese small pans marked 1/31, because it is unknown the actual date of preparation (cooking of noodles), per code items were voluntarily discarded. Observed cooked bones with date mark 1/24 and 1/23. Resurface so that it a smooth and easily cleanable surface. Observed standing water in walk in cooler from roof leak. PIC stated metal for roof has been ordered. Repeat. Give time to make repairs.
