General CommentsEHS observed singular container of salsa roja date marked at 12/08 during restaurant preparations. This item was the only TCS food item subject to date marking that was observed to be beyond its 7 day shelf life. As the item was found during initial preparation period prior to food service and was appropriately disposed of, establishment was considered in compliance by EHS in regards to date marking and disposition. EHS observed the preparation of an ice bath for to go cups of red slaw and sauces. In this time, EHS observed effective cooling of to go cups of slaw. EHS has provided establishment with TPHC plan sheet to be utilized at their discretion, should they find that ice baths do not effectively maintain the temperature of TCS food items. Should these items be held on TPHC, facility will prepare a TPHC plan, make it available for EHS review at the time of inspection, and verify that the proper processes are put in place as described by the plan.
