4-501.11 Maintain equipment in good repair. Observed hot box unit and dishmachine both out of service. PIC stated that hotbox had a new heating element installed this past Thursday, but was waiting on a temperature control knob and reading display parts to arrive. Dishmachine can still properly function, but leaves massive leak that pools water in WIC and new dishmachine should be arriving in the next couple weeks per PIC. VR for proper functions of equipment once repairs and installations are made. All cooking equipment and utensils are being sent through 3 comp sink and establishment has been using single-use plates and articles until new dishmachine is installed. |
