CDI- Potatoes and rice said by PIC to be cooked yesterday were date marked. Cooked chicken, which PIC could not verify date was voluntarily disposed of. (repeat) 3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it is not been labeled, or if the label is incorrect. -P Observed a number of foods with confusing and/or old date markings in walk in cooler: cooked chicken date marked for 12 days ago, cooked TCS tomato sauce date marked for 10 days ago, onion sauce date marked with two different date stickers and a pan of veggie sambar with 3 different date stickers. CDI- Incorrectly date marked foods voluntarily disposed of.
