4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization-Temperature, pH, Concentration and Hardness - P Observed QUAT sanitizer at 3 comp sink was reading 0 ppm sanitizer. Deli manager stated she had asked for maintenance to fix the issue earlier this morning. CDI - Maintenance arrived and fixed the sanitizer. Sanitizer level increased to 200 ppm.
4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf Observed pair of tongs with food debris on them stored as clean. CDI - Tongs were moved to be cleaned. |
