Cooling shall be accomplished in accordance with proper time and temperature by using one or more of the following methods: shallow pans, thinner portions, rapid cooling equipment (walk-in), metal containers (facilitate heat transfer), pre-chilling ingredients, venting lids, or other effective means. Noted many TCS cut fruits were on the edge of the 4hr required ambient cooling time frame. Please cool these in walk-in vented under cool fan for most efficient cooling.
