Observed various TCS foods cooling covered in large quantities inside reach-in units. Refer to temperature chart for details. Products had been prepped and placed into the units an hour prior to EHS arrival. Foods were being prepared in advance for the weekend rush. CDI - All items uncovered, separated into smaller portions, placed into ice baths and relocated to reach-in freezer for rapid cooling to < 41 F.
Facility is cooling above what permit allows. TCS foods shall be limited due to lack of refrigeration space. PIC advised EHS of possible addition of walk-in cooler in the next 6 weeks. PIC has reached out to MCHD plan review specialist for prior approval of unit.
***If cooling not rectified by next inspection, an Intent to Suspend will be issued.
