Clean the interior surfaces inside the traulsen chicken reachin in, door jams and gaskets on the traulsen lowboys. Clean the exterior cook line equipment surfaces on the oven, fryers, sides of the fryers, hot holding units, make line station surfaces and holding lines. Equipment surfaces are to be clean. Nonfood Contact Surfaces shall be clean at a frequency to preclude the accumulation of soil residues. |
