A employee who has passed an ANSI accredited course to become a certified food protection manager must be on duty during all operational hours.
6 0.50 Proper eating, tasting, drinking or tobacco use No No No 2-401.11 Eating, Drinking, or Using Tobacco (C) - Upon arrival, EHS observed a employees opened can of soda stored on the cutting board of the prep unit. Employees beverages should be covered with a lid and stored in a manor that wont pose a contamination risk to exposed food, clean equipment, single service articles or food contact surfaces.
21 3 Proper hot holding temperatures Yes Yes No 3-501.16 (A) (1) Time / Temperature Control for Safety Food, Hot and Cold Holding (P) - EHS observed fried chicken, fried fish and fried okra in the hot holding display case below 135 degrees F. EHS observed chili in the hot holding unit that was below 135 degrees F. PIC stated they had just had the elements changed in the hot holding unit and they were still trying to figure out where they should set the thermostat. PIC showed EHS receipts for the repair. PIC stated the staff had also not been closing the door completely today. Hot held, potentially hazardous food should be maintained at 135 degrees F or higher at all times. CDI: PIC reheated the items to above 165 degrees F before placing them back in the unit. PIC said one of the thermostats was set low and adjusted the temperature of the unit.

Chemicals moved to a working container should be labeled with the common name of the chemical inside of it e.g. Bleach Sanitizer. CDI: EHS educated PIC on chemical labeling and the containers were labeled.

After being used, the lid and side doors of the outside trash receptacle should be closed to prevent attracting pests.
