General CommentsFacility using non-continuous cooking process for lobster at sushi station. Lobster is par-cooked to ~120F, rapidly cooled using ice, and then finished cooking inside of crock pot filled with butter at sushi station prior to service. Facility was not completing any non-continuous cooking during inspection. Non-continuous cooking must halt until gaining approval from local health department. Facility does not currently have a walk in cooler. EHS recommends addition of blast chiller to gain approval for non-continuous cooking of lobster. EHS Emailed application to PIC and will meet with supervisor to discuss potential approval for non-continuous cooking.
