General CommentsEHS had productive discussion with PIC regarding modifications to improve their cooling outcomes. EHS explained that shallow containers, metal containers, keeping items without lids or tight seals, and not overfilling containers all can contribute to improving air flow around the food, which decreases heat. EHS advises the PIC to utilize their probe thermometer to monitor items cooling with increased frequency to assure they are on track to reach 70F within the first 2 hours, and 41F by the end total of 6.
