3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf-Observed TCS food items in Prep Table ( flip top) and below in its reach-in cooler #1 and in the hot well without date marks that were prepared the day prior. Observed in RC #2 TCS cooked food items dated with today’s ( 4-15-2025) date when they were prepared the day prior ( 4-14-25). -CDI-PIC placed proper date marks on all food items.
