4-501.11 - Good Repair and Proper Adjustment: Equipment shall be maintained in good repair.
*Observed torn gasket in reach in cooler near ice machine. Gasket needs to be replaced when in bad repair. Dish machine is not working and 3 comp is being used until dish machine is repaired. In both reach in coolers, racks are starting to rust and need to be replaced/repaired. |

6-501.12 - Cleaning, Frequency and Restrictions: All physical facilities shall be maintained in good repair and shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
*Ceiling tracks throughout kitchen are starting to rust. In walk in cooler, observed dust buildup on ceiling, especially near fans. Wall behind dish storage near doorway between dining space and kitchen is chipping paint from being hit with utensils. Need to repair wall. |
