The walk-in freezer has a build up of ice so the freezer door does not shut fully. The heat strip is no longer working on the WIF door seal perimeter. Fix the heat strip or remove the ice. The racks in the walk-in cooler, freezer, and dish storage are rusting and need to be repaired or replaced. Gasket on outside Walk-in freezer is torn and is not longer easily cleanable, this needs to be replaced.

Observed that the soda machine lines are soiled and have microbial growth under the machine and the motor pump. Clean the lines and the pump. Speedracks in walk-in need to be detailed and sides and tops of ovens and equipment on cookline where grease and dust have accumulated.

Floors in walk-in freezer need to be detailed and under the soda machine. Detail microbial growth from ceiling of walk-in refrigerators. Detail clean behind all sinks and splashguards where they are sealed to the wall due to buildup of potential microbial growth. Ceiling in inside walk-ins need to be detailed due to buildup of potential microbial growth in crevices where ceiling pieces connects. Detail fly fan and bug light in back of kitchen. 6-101.11 - Surface Characteristics: Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. *Floor tiles throughout facility are starting to crack and some are missing. Holes in FRP Paneling need to be plugged or filled to allow easy cleaning. Ceiling tiles throughout are either missing, stained, and some are water damaged and bulked hanging out of the ceiling. Water and food debris is standing in crevices of floor tiles around drains. These need to be repaired so that water and food debris do not get trapped. Floor of walk-in outside being used for dry storage has pulled up and needs to be replaced. 6-501.11 - Repairing: Floors, walls, and ceilings including the attachments such as soap and towel dispensers; light fixtures; and heat/ac vents shall be maintained in good repair. *Floor Tiles throughout facility are starting to crack and some are missing. Holes in FRP Paneling need to be plugged or filled to allow easy cleaning. Ceiling tiles throughout are either missing, stained, and some are water damaged and bulked hanging out of the ceiling. Vent hanging out of ceiling above breader station. These need to be repaired or replaced.

Socket where one light used to be appears to be missing.
