General CommentsEstablishment may use 6-hour TPHC for both prep coolers for today only. EHS will make a follow-up visit tomorrow to see if the coolers have been repaired. If temperatures are not 41 degrees or below, TCS foods from Dunkin Donuts may not be sold. During conversation with the PIC, he revealed that prep coolers are turned off at night to thaw and then turned back on in the morning for cold TCS foods. EHS does not recommend this practice due to prep coolers taking several hours to come down to temperature (41 degrees)
