General CommentsBoth REHS and PIC's thermometers had their calibrations verified in ice water and read 32 degrees F. REHS thoroughly sanitized their thermometer at the beginning and throughout the inspection.

Tongs found hanging at waist height off of a prep line, which is subject to contamination by people walking by. During pauses in FOOD preparation or dispensing, shall be stored: (B) In FOOD that is not TIME/TEMPERATURE CONTROL FOR SAFETY FOOD with their handles above the top of the FOOD within the container or EQUIPMENT that can be closed. The fry fridge is currently not working, but the facility had already removed all food from it and is not going to use it until it is repaired. Points reduced to half for improvement. Ensure stickers are removed before the containers are washed. Degreaser is an effective tool for getting rid of sticker residue. NONFOOD-CONTACT SURFACES of EQUIPMENT shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

A REHS will return on Thursday 2/26/26 to verify that this is fixed. Maintain sanitary sewage system. 5-402.11 Backflow Prevention (P) The tube for the drain maintainer was found beneath the flood level rim of the floor drain in the basement prep area. CDI - PIC moved the tube out of the drain. (A) Except as specified in (B), (C), and (D) of this section, a direct connection may not exist between the SEWAGE system and a drain originating from EQUIPMENT in which FOOD, portable EQUIPMENT, or UTENSILS are placed.
