3-501.17 (B) Ready-To-Eat Time / Temperature Control for Safety Food, Date Marking (Pf) REPEAT - Slight improvement as opened containers of pico and slaw were observed date marked this time, but the date marking stickers used indicate that the products are good for 30 days after opened. READY-TO-EAT TIME/TEMPERATURE CONTROL FOR SAFETY FOOD prepared and PACKAGED by a FOOD PROCESSING PLANT shall be clearly marked, at the time the original container is opened in a FOOD ESTABLISHMENT and if the FOOD is held for more than 24 hours, to indicate the date or day by which the FOOD shall be consumed on the PREMISES, sold, or discarded, based on the temperature and time combinations specified in (A) of this section and: (1) The day the original container is opened in the FOOD ESTABLISHMENT shall be counted as Day 1; and (2) The day or date marked by the FOOD ESTABLISHMENT may not exceed a manufacturer’s use-by date if the manufacturer determined the use-by date based on FOOD safety. CDI - PIC was able to show receipt where the pico and slaw only arrived two days ago. Date marking corrected. If a repeat next inspection, full points will be taken. VR Verification required by 3/27 to determine correct date marking is being used. |

3-501.19 (B)(4)Time as a Public Health Control (P) 3x Repeat - Immediately after arrival PIC went to hot hold display and discarded all sandwiches. All but 2 items in the case were 20minutes or more beyond the time indicated on the stickers used for tracking time. PIC was tracking the time for the pizza on her cell phone and states that it had just gone off. Tracking hot holding times on a personal cell phone is not an approved method. Hot items held for time shall be sold, consumed or discarded after 4 hours as indicated by the discard time recorded. CDI: PIC voluntarily discarded items held past their discard time. If a repeat on next inspection points will be taken |
