Raw scallops were being stored over onions and RTE sauces in the 2 door fridge on the right. Foods shall be stored according to final cook temperature with RTE foods always at the top. CDI- PIC rearranged storage order. |

3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food, Hot and Cold Holding (P). The 2 door fridge on the left was not maintaining temperatures of 41F or below. Cold TCS foods must be maintained at least 41F or below. The only TCS foods in the unit were cut potatoes, commercially prepared salad and raw shrimp. The shrimp and potatoes were recently prepared (between 1-2 hours) and cooling in the fridge. The establishment only prepares food which is ordered on a daily basis. The ambient air thermometer in the unit was reading 50F and the outside thermometer was reading 45F. CDI- PIC moved the TCS foods into a functioning unit until the fridge can be serviced. |
