20 1.50 Proper cold holding temperatures Yes No No 3-501.16(A)(2) Maintain TCS foods in cold holding at 45F or less. -P Observed cabbage and potato salad containers in the unit that had been placed in for service at 47-49F. Service for the unit was cancelled due to rain, items were waiting to be returned to the main kitchen. As items are commercially packaged, EHS allowed items to be placed back into the main commissary kitchen cooler to cool down to 45F. Items in the food truck are all kept on a 4 hour time period once service begins, ensure that the coolers are functioning properly enough to begin time procedures at 45F, or time will be required to start once items leave the commissary kitchen.
