2-102.12 (A) PIC shall demonstrate knowledge by being a certified food protection manager.
Observed no CFPM present at the facility at the start of the inspection. Food employee called manager who is a CFPM. CFPM arrived into the inspection briefly after inspection began.
Ensure that there is a certified food protection manager at the facility during all hours of operation.
