3-403.11 (A),(D) Reheat all TCS foods to 165F within 2 hours if food is to be hot held until service. -P Observed black beans on hot hold line at 129.0 degrees F. CDI this was the result of improper reheating . CDI PIC moved beans to stove and reheated to 169.0 degrees F. Points not escalated since only one item was observed improperly reheated and this was an improvement since last inspection. |

Observed queso cooling in walk in cooler in volume that did not facilitate cooling to meet cooling parameters and raw chicken which had been processed cooling in improper ice bath (most of ice had melted). Queso split into half volumes and proper cooling achieved. More ice added to raw chicken and proper cooling achieved. |
