Pan was uncovered and stacked to the top of hotel pan. Patties near the bottom were temping at above 135F. Patties had been placed out for 20 minutes, so employee removed patties and placed in oven to reheat. Repeat. |

Establishment had dish plate to temp high temp dish machine, but temperature measuring device was still in packaging. Ensure dish machine is temped daily to ensure it is working properly to effectively wash, rinse, and sanitize dishes. CDI, EHS requested PIC to remove dish plate from packaging to ensure it did work. Repeat. |
