3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed one (1) stick of cut unsalted butter in RIC next to WIC. Per conversation with PIC, butter was opened on the previous day. All other TCS, non date mark exempt foods were properly date marked. CDI - Butter package was marked to display date of opening.
