4-602.11 Clean the equipment and utensils used with nonTCS foods as required to avoid contamination. Observed minor build up on the large ice machine. Build up was noted on the roof of the compartment where transport carts are pushed in. This portion of the compartment can come into contact with ice stored inside the cart. Also observed build up on the upper lip of the transport cart itself. Ice from this machine is used as food contact in the seafood department. |
