4-703.11 Hot Water and Chemical - Methods-P. REPEAT. Dish surface temp in the dish machine was observed reaching 124F. Ware washing machine shall have a dish surface temperature of at least 160F. CDI, manager was informed not to use the machine for sanitizing the dishes until the water temperature could be increased. Facility had chemical sanitizer at the 3 comp sink.The facility nowhas test strips for their dish machine. I will verify this has been fixed in 72 hours. |

Observed regular milk and oat milk in the reach in cooler by the drive thru window holding at 54F-55. I will verify the unit has been fixed in 72 hours. The ambient temperature of the ric by the window was 55F. The ambient temperature at the far right end of the cash register read 56F. F. Maintain TCS foods in cold holding at 41For less. CDI, all food items moved to other reach in coolers. |
