3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it has not been labeled, or if the label is incorrect. -P The PIC should train and assign staff to monitor date marking to prevent the use of food products that are no longer in compliance with 3-501.17 (A), (B), or (C) -Observed all ready-to-eat products (crab cakes, salmon patties, hot dogs, crab legs, salmon, shrimp, chilean sea bass) in the display case without date marks. PIC stated all foods are moved to the WIC on speed racks overnight, then the pans are swapped in the morning to clean pans. PIC stated the dates are typically added to the new pans in the morning, yet they were not yet added. PIC stated all foods products were opened/prepped yesterday. -CDI- PIC properly added date marks to all items.
