General CommentsManager described system for the date marking of ready to eat display items, including cooked shrimp and frankfurters: Items have paper tags applied to the undersides of their trays or tray paper when put on display, with a date for disposal. Recently placed thawing salmon cakes did not yet have a tag at time of inspection. EHS recommends that tags are placed at time of placement, so as to properly verify date of opening and that items are not held for greater than 7 days.
