4-501.19 During manual warewashing, maintain the wash solution at a minimum of 110F or as otherwise allowed by the detergent manufacturer label. - Pf - Observed hot water at three compartment sink peak at 104F and decrease to below 100F. Detergent manufacturer label does not indicate a required water temperature. Increase water temperature to maintain a minimum of 110F. - VR - Verification required within 10 days. |
