General CommentsPIC stated facility no longer uses a commissary. Food is ordered through Sysco and Gordon’s. All dressings are commercial except for tzatziki dressing which is made in house. Facility is now offering steak and salmon that they hold hot for two hours and then discard. PIC provided correct procedures and facility documents reheat temperatures before holding on time. EHS observed consumer advisory attached to steak on menu boards but PIC stated steak is fully cooked and is just reheated to 145F. EHS could not confirm with labeling on box if steak was fully cooked. Label stated it was sous vide but did not state that is was fully cooked; label also did not state if it was whole muscle intact beef or mechanically tenderized. PIC stated that a spec sheet will be obtained from Gordon’s to verify this information. EHS will confirm on return visit to observe repairs to dressing make unit.
