Stephan dough lid observed with build-up and dried dough. Food contact surfaces are to be clean. Lid cleaned. Multiple large pans found with build-up along the edges and under neath.
Frequency (P) Food contact surfaces shall be clean to sight and touch. Noted numerous clean pizza pans and food containers with food and flour residues. CDI instructed PIC to go thru container and pans and remove those with food residues. They were placed at the 3 compartment sink to be washed, rinsed and sanitized. |
