3-501.17 Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. -Pf Observed boiled eggs and sandwich meats not correctly date marked. Items were marked for date of freezing, but no thaw/package opened date was recorded. Insure that when frozen items are thawed, that a date is recorded with the date of thawing if the item has been opened from original packaging, or date mark the item when the commercial package is broken. |
