There was buildup observed on a knife stored as clean in the knife holder. There were also clean dishes sitting in the a small amount of water in the sanitizer vat of the 3 comp sink. There was a dirty dish sitting on top of the clean dishes and dirt and crumbs on the drain board of the sink next to the clean dishes. EQUIPMENT FOOD-CONTACT SURFACES and UTENSILS shall be clean to sight and touch. CDI, the knife was put into the sink to be rewashed and the manager of the department was made aware and began to clean the dish sink. |

The wood on the door jamb of the produce cooler and the area around it was damaged and there was a missing hole cover in the walkin cooler near the door. Equipment shall be maintained in good repair. Repair the door jamb and replace the hole cover. |

There was rusty buildup on the vent covers in the walkin cooler, debris observed under the prep tables, crumbs observed on the lower shelves of the prep tables and the display cases had a buildup of debris and need cleaning. NONFOOD-CONTACT SURFACES of EQUIPMENT shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Clean these areas. |

6-201.13 Floor and Wall Junctures, Coved, and Enclosed or Sealed (C)
The coved baseboard under the prep table and sink in the cold room was loose. In food service establishments in which cleaning methods other than water flushing are used for cleaning floors, the floor and wall junctures shall be coved and closed to no larger than one thirty-second inch (1 mm). Reattach the coved baseboard.
6-201.11 Floors, Walls and Ceilings - Cleanability (C)
There was a leak coming from the wall under the prep table at the veggie wash sink. The leak had worn the floor down so that it was no longer smooth and there was a puddle of water under the floor mat. Establishment must provide floors, floor coverings, walls, wall coverings, and ceilings that are designed, constructed and installed so they are smooth and easily cleanable. Antislip floor coverings may be used for safety reasons. |
