Observed cupped marinara sauce in the sauce prep cooler marked past the 7 days. Ready-to-eat TCS food prepared or opened from sealed packaging from a food processing plant shall be date marked and sold, consumed, or discarded within 7 days. The day the food is prepared or opened shall be counted as Day 1. The time the product is frozen does not count toward the 7 days.

Observed the end of the hose laying in the bottom of the service sink basin and is connected to the water supply at the service sink. An air gap between the water supply inlet and the flood level rim of the plumbing fixture, equipment, or nonfood equipment shall be at least twice the diameter of the water supply inlet and may not be less than 25 mm (1 inch).
