4-501.11 Good Repair and Proper Adjustment - Equipment (C) Equipment shall be maintained in good repair. Repair cooler that holds celery and ranch near front entry way of kitchen. Replace split gaskets on cold holding equipment throughout. Replace rusted shelving in 2 door cooler. Repair the handle on the walk-in cooler door. Repair the meat drawers under flat top that are not working. Repeat. |

Clean the inside bottom surface of the upright freezer from food crumbs and residue. Detail clean walls being fryers/ grill and the hood system vents. Non-food contact surfaces of equipment shall be cleaned at a frequency to prevent the accumulation of soil residue. All equipment needs to be cleaned. REPEAT. |

6-501.12 Cleaning, Frequency and Restrictions (C) Observed the walls throughout the facility are in need of detailed cleaning from grease build-up. Floor in hard to reach areas such as under the stainless steel equipment is in need of detailed cleaning. Clean floor surfaces under 3-comp sink and dish machine as well as the floor between walk-in cooler and mop sink. Clean walls around hood system. Clean walls where splatter has occurred around all equipment. Physical facilities shall be cleaned as often as necessary to keep them clean. REPEAT.
Also, repair the FRP wall by wing sauces where it has broken. |
