Approved methods for thawing are refrigeration, under cold running water 70°F or below, microwave, or as part of the cooking process.
Observed Shrimp thawing in prep sink without running water to flush particles and maintain temperature.
Water temperature was 49F.
(E) REDUCED OXYGEN PACKAGED FISH that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment:
(1) Prior to, or Immediately upon completion of its thawing.
