Observed tomatoes, lettuce, and cheese on the prep top line with a temperature above 41F. Items had been placed on the line 30 mins ago. CDI- PIC moved items tot he walk in cooler for more rapid cooling. Some of the lettuce, cheese and tomatoes brought from the WI cooler and held on time until the unit is repaired.. The unit was placed out of service and will be back next day to ensure the unit is fixed. REPEAT.
