3-501.19 Provide and follow written procedures for foods held using Time as a Public Health Control (TPHC). Clearly mark foods with begin and end times. All food not sold by the end of 4 hours shall be discarded. -P/Pf. Observed dairy creamers at coffee station were marked with incorrect time on bottom of carafes. Facility uses a backup timer and that timer was correctly set for proper discard time. PIC discussed with employee who admitted he had neglected to change the labels when he changed the creamers and reset the timer. We then discovered that the carafes themselves were likely not changed either. PIC believes that they were just refilled. CDI - PIC discussed corrections with employee and creamers were discarded and new product in new carafes was provided. |
