General CommentsEHS observed only one written TPHC procedure for both hot and cold items. EHS provided new written TPHC procedures for PIC to fill out. Facility must clearly indicate which units are to be held on TPHC and ensure proper procedures are being followed. EHS observed chicken tinga holding at 40F in hot holding unit that is supposed to be on TPHC. EHS educated PIC on ensuring that hot items are at 135F or above and not placing items out of temperature control until they are ready to be reheated and placed on TPHC.
