General CommentsInspection occurred at shared kitchen (CCK) with truck present. EHS had lengthy discussion with Mr Newton about proper reheating of food prior to service. Reheating today appeared to take longer than anticipated. Pans with tightly packed volumes of proteins were 40F at start of reheating process and would have taken more than 2 hours to reach 165F without intervention. Discussed breaking apart tightly packed volumes of pulled meats, transferring to shallow pan, reheating in oven, then transferring back to smaller pan for transport. EHS also reiterated importance of reheating to 165F or above within 2 hours.
