3-501.17 Ready-To-Eat Potentially Hazardous Food (Time/Temperature Control for Safety Food), Date Marking - PF Observed a container of cooked beef with carrots and a container of mortadella in the walk in cooler with a date of 11/23. PIC explained that these items were prepped and frozen the same day it was prepped (11/23). The products were placed in the walk in cooler yesterday to thaw. Explained to PIC that a prep date, freeze date, and thaw date should be placed on items to keep track of when to discard food. CDI- PIC placed freeze and thaw date on items. |
