3-501.15 Cooling Methods (Pf) Cabbage that was cut this morning was in the walk in cooler with plastic wrap over the pan at 56 degrees F. When cooling, do not tightly cover the pan to allow for heat transfer. Product should cool to 41 degrees F within 4 hours. CDI: Plastic wrap was removed. |
