General Comments
EHS observed proper usage of TPHC procedures within the kitchen at time of inspection, including labeling and disposal of past time food items and maintenance of in house TPHC instruction sheet. However, EHS noted instruction sheet had been filled out improperly, both 4 and 6 hour instruction boxes had been selected, as well as all initial storage option boxes (removal from hot holding, removal from cold holding, and cooking.) EHS has reviewed TPHC plan with PIC and provided a new sheet to PIC, with only relevant selection boxes checked. EHS observed altered menus, with stickers placed to distinguish consumer advisory and vegetarian options. As discussed in previous verification notes, the recommended long term correction will be a reprinting of the establishment menu, with entirely distinct symbols for Consumer advisory and vegetarian/non consumer advisory notifiers. Facility should contact EHS or Mecklenburg County Health Department with drafted menu revisions prior to reprinting for service (I.E. provide a test menu). EHS will resend 02/16/2023 verification notes to on file email addresses.
