Observed containers of mac & cheese casserole cooling tightly covered on shelving unit inside walk-in cooler (WIC). Products had been placed prepped and placed into WIC moments prior to EHS arrival. CDI - All items uncovered and relocated to walk-in freezer for rapid cooling to < 41 F.
***EHS discussed of continuation of RCP cooling documentation. Facility will submit weekly reports of cooling log as a means to track progress on cooling methods. |
